Chai Banana Oatmeal

If you love Indian spices, you’ll love this Chai Banana Oatmeal.

  • 1/4 cup steel cut oats
  • 3/4 cup unsweetened vanilla almond milk
  • 3/4 cup water
  • 1/4 tsp cinnamon
  • 1/8 tsp ground cardamom
  • 1/8 tsp turmeric
  • 2 peppercorns, freshly ground
  • dash of salt
  • 1 tbsp honey (or more if you like sweeter oatmeal)
  • 1 banana, sliced
  • Handful of pistachios

In a medium saucepan over high heat, combine milk, water, spices, and honey. Bring to a boil and add steel cut oats. Reduce heat to medium low and cook uncovered for 20 minutes. Add half of sliced banana and cook for an additional 5-10 minutes or until desired consistency. Meanwhile, in a small fry pan over medium high heat, toast pistachios for 4-5 minutes. Pour oats into a bowl, top with remaining slices of banana and pistachios.
